Cranberry Coconut Goat Cheese Bites
- ⅓ cup dried, sweetened cranberries
- ⅔ cup walnuts
- ⅓ cup unsweetened coconut flakes
- 1 package Trader Joe's Honey Chevre (goat cheese)

- ⅔ cup walnuts
- ⅓ cup dried, sweetened cranberries
- ⅓ cup unsweetened coconut flakes
Large Coconut Cranberry Goat Cheese Ball
- ⅔ cups dried, sweetened cranberries
- 1⅓ cup walnuts
- ⅔ cup unsweetened coconut flakes
- 2 packages Trader Joe's Honey Chevre (goat cheese)
Instructions
For Bites
- Add walnuts and cranberries to the food processor with blade attachment. Pulse until mixture looks like sand, with pieces no larger than a grain of rice.
- Cut cheese in 4-5 pieces, add to food processor along with coconut flakes. Mix until ball forms. Use a teaspoon to form equal sized bites.
- Roll into a ball, place in airtight container and repeat with remaining cheese mixture, you'l have about 12 goat cheese bites. Keeps for up to 4 days in the refrigerator.
For Cheese Ball
- Make topping first. Add walnuts, cranberries and coconut to the food processor with blade attachment. Pulse until mixture looks like sand, with pieces no larger than a grain of rice.
- Pour topping into large bowl and set aside.
- Add walnuts and cranberries to the food processor with blade attachment. Pulse until mixture looks like sand, with pieces no larger than a grain of rice.
- Cut cheese into 4-5 pieces per package, add to food processor along with coconut flakes. Mix until ball forms.
- Remove ball from food processor and roll in topping mixture, pressing toppings in as necessary while maintaining ball shape. You'll likely have extra topping.
- Place ball on serving plate and place extra topping around ball if desired. Serve with crackers – Rosemary Raisin Crisps from Trader Joe's would be amazing with this cheese ball!
