This is my go-to breakfast when I want something filling to keep me feeling full all morning but light enough so I don’t feel sleepy and sluggish. That probably sounds like an oxymoron but once you try this oatmeal, you’ll totally get what I mean. It’s so rich and creamy you’d never guess this oatmeal is both dairy free and gluten free.
Creamy Oatmeal Without Dairy
The secret is frozen banana slices. When they cook down they melt into the creamiest texture. It requires a little planning but if you’re anything like me, you have frozen banana slices ready to go in the freezer more days than not for this oatmeal and for my favorite smoothie. I like to buy a ton of bananas and use about half to freeze for smoothies and oatmeal. Little tip: wait until they’re starting to get spots to freeze them that way they’re at their peak sweetness.
Stovetop vs. Microwave
I personally prefer to make my oatmeal on the stove instead of the microwave. I swear it takes less time and in my experience, creates wayyy less of a mess. When I microwave oatmeal, I spend all of my time heating it in short bursts to make sure it doesn’t spill over and explode. I only fail 100% of the time. So, stovetop it is! I pour all of the ingredients into the sauce pan and heat over medium to high heat. Using a wooden spoon, I stir pretty much constantly the entire time once it starts to come to a boil to ensure it doesn’t stick to the bottom of the pan. You can add the berries with all the other ingredients. I prefer to wait to add them until the very end and sprinkle them on top. Also, I like to keep my berries in the fridge or even in the freezer to get the contrast between the hot oatmeal and cold berries.

Ingredients
- 1 cup oat milk
- ½ cup gluten free rolled oats
- ½ frozen banana, sliced
- 1 tbsp chia seeds
- 1 tbsp quinoa, uncooked
- 1 tbsp peanut butter or other nut butter
- handful blackberries, chilled or frozen
Instructions
- Add all of the ingredients to a sauce pan, except the berries. Heat over medium to high heat, stirring more frequently as the mixture heats up.
- Once the oatmeal is boiling, let it cook for another 2 minutes or so until the mixture is creamy and the oats are soft.
- Remove from heat and top with chilled berries
