Chewy Chocolate Chip Cookies

Crispy edges, chewy centers. Basically everything a cookie should be.

  • Stand mixer or hand mixer
  • 1 large bowl if using a stand mixer, 2 large bowls if using a hand mixer
  • Baking sheet
  • Parchment paper


  • 14 tablespoons salted butter
  • ¼ cup brown sugar, packed
  • cups granulated sugar
  • 1 tbsp molasses
  • 2 eggs
  • 2 tsp vanilla extract
  • cups all-purpose flour
  • tsp baking soda
  • 1 tsp baking powder
  • ½ tsp salt
  • 2 cups semi-sweet chocolate chips


  • Pre-heat oven to 350 degrees and line a baking sheet with parchment paper, set aside
  • If your butter is straight out of the fridge, pop it in the microwave for 15 seconds. Add butter, sugars and molasses to the bowl of a stand mixer or in a large bowl if using a hand mixer
  • Mix on medium speed for up to 10 minutes or until mixture is lighter and fluffy
  • Add the first egg and mix until fully incorporated before adding the second
  • Add the vanilla extract and continue mixing on medium speed until mixture is fluffy and light, an additional 2-4 minutes
  • In a large bowl add the flour, baking soda, baking powder and salt. Whisk to combine
  • Add ½ of the flour mixture to the wet ingredients, mix on low speed for about 5 seconds. Add the remaining flour mixture and mix until almost incorporated, about 15 seconds.
  • Stir in chocolate chips
  • Use a tablespoon, ice cream or cookie scoop to spoon out 2 tablespoons of batter and form into a ball. Place 2" apart on your parchment-lined baking sheet
  • Bake for 10 minutes, pull out pan and give it a couple of bangs on the counter. Place it bake in the oven for another 2 minutes. Pull out your baking sheet and give it another couple of bangs. Let the cookies rest for 5 minutes and then move to a cooling rack.
