Pre-heat oven to 350 degrees and line a baking sheet with parchment paper, set aside
If your butter is straight out of the fridge, pop it in the microwave for 15 seconds. Add butter, sugars and molasses to the bowl of a stand mixer or in a large bowl if using a hand mixer
Mix on medium speed for up to 10 minutes or until mixture is lighter and fluffy
Add the first egg and mix until fully incorporated before adding the second
Add the vanilla extract and continue mixing on medium speed until mixture is fluffy and light, an additional 2-4 minutes
In a large bowl add the flour, baking soda, baking powder and salt. Whisk to combine
Add ½ of the flour mixture to the wet ingredients, mix on low speed for about 5 seconds. Add the remaining flour mixture and mix until almost incorporated, about 15 seconds.
Stir in chocolate chips
Use a tablespoon, ice cream or cookie scoop to spoon out 2 tablespoons of batter and form into a ball. Place 2" apart on your parchment-lined baking sheet
Bake for 10 minutes, pull out pan and give it a couple of bangs on the counter. Place it bake in the oven for another 2 minutes. Pull out your baking sheet and give it another couple of bangs. Let the cookies rest for 5 minutes and then move to a cooling rack.
